Unless a recipe specifically calls for powdered ginger, always use fresh ginger in stir-fry dishes.

Take two cups of matzoth flour, one-quarter pound of powdered ginger, mix together with three eggs.

Then mix together powdered ginger and pepper, and rub it well over every part of the meat.

Powdered ginger will not do at all.
